Reindeer carrot cake

Try this festive Christmas dessert: Reindeer Carrot Cake with cream cheese icing and candied carrots - perfect for the whole family to enjoy!
Ingredients:
  • 110g brown sugar
  • 175g golden syrup
  • 185ml olive oil
  • 3 free range eggs
  • 4.40 gm vanilla extract
  • 150g self-raising flour
  • 2.50 gm bicarbonate of soda
  • 1.25 gm ground cinnamon
  • 3 medium carrots, peeled, grated
  • 660g caster sugar
  • 2 carrots, extra, peeled into ribbons
  • 250g spreadable cream cheese
  • 80g icing sugar
  • 2.20 gm vanilla extract
Instructions:
  • Preheat your oven to 170C. Grease and line a deep 20cm round cake pan with baking paper for easy removal later.
  • In a large bowl, combine brown sugar, golden syrup, oil, eggs, and vanilla. Whisk until smooth.
  • In a separate bowl, mix the flour, bicarbonate of soda, and cinnamon. Add grated carrot and stir well. Combine the dry ingredients with the wet ingredients until just mixed. Transfer the batter to the prepared pan and bake for 1 hour or until a skewer comes out clean. Let it cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  • In a saucepan over low heat, combine caster sugar and 2 cups (500ml) water. Stir for 3 mins until sugar dissolves. Increase heat to high, bring to a boil. Add carrot ribbons, reduce heat to medium-low, and simmer for 10 mins until translucent. Let cool completely, then drain carrots and discard syrup.
  • For the cream cheese icing, whip cream cheese, icing sugar, and vanilla with an electric mixer until light and creamy. Spread the delicious icing over the cake and finish by adding the candied carrot on top. Enjoy!
