Reindeer Peanut Butter Cookie Pops

Festive reindeer peanut butter cookies topped with chocolate candies - a merry holiday treat.
Ingredients:
  • 1/2 cup creamy peanut butter
  • 1/2 cup butter or margarine, softened
  • 1 1/2 cups Gold Medal™ all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • About 56 small pretzel twists
  • About 28 wooden sticks with rounded ends, if desired
  • 1 ounce semisweet baking chocolate
  • 1/2 teaspoon shortening
  • About 56 candy-coated chocolate candies
  • About 28 red candy-coated chocolate candies or red cinnamon candies
Instructions:
  • In a large bowl, blend together granulated sugar, brown sugar, peanut butter, butter, and egg using an electric mixer on medium speed or mix with a spoon. Add flour, baking soda, and baking powder.
  • Wrap the dough in plastic wrap, allowing the ends to remain open. Shape the dough into a 7-inch log. Pinch along the top of the log and plastic to create one corner of a triangle. Roll the log over and pinch to form the second corner. Repeat for the third corner. Adjust the sides to create a triangular-shaped log. Seal the ends of the plastic wrap and refrigerate for at least 2 hours.
  • Preheat the oven to 375°F. Slice the log into 1/4-inch slices and insert a 1-inch wooden stick into a corner of each cookie. Place the slices about 2 inches apart on an ungreased cookie sheet, reshaping if needed. Insert 2 pretzels into the top of each cookie slice to make antlers. Bake for 6 to 8 minutes or until the edges are firm. Let them cool for 1 minute before transferring to a wire rack to cool completely.
  • Prepare a plate lined with waxed paper. Combine chocolate and shortening in a small microwavable bowl. Microwave uncovered on Medium (50%) power for 3 to 4 minutes, ensuring to stir after 2 minutes, until the mixture is smooth. Using tweezers, dip half of each candy-coated chocolate into the melted chocolate. Place the dipped candies on the lined plate to dry. Attach chocolate-dipped and cinnamon candies to cookies using the melted chocolate mixture to create eyes and noses for the reindeer, reheating the mixture if needed. Store the finished cookies in an airtight container.
