Indulge in a warm, comforting rhubarb and apple crumble as the perfect winter treat.
Ingredients:
  • 3 Granny Smith apples, peeled, cored, coarsely chopped
  • 55g caster sugar
  • 2.50 gm ground cinnamon
  • 1 bunch rhubarb, coarsely chopped
  • 150g raspberry
  • 80g butter, chopped
  • 110g brown sugar
  • 75g plain flour
  • 90g rolled oats
  • 40g corn flakes
  • 20g shredded coconut
  • 40.00 ml flaked almonds
Instructions:
  • - Preheat your oven to 180C. - In a saucepan over medium heat, combine apple, caster sugar, cinnamon, and 1 tablespoon of water. Stir occasionally and cook for 5 minutes until the apple is tender. - Add the rhubarb and continue to cook for another 5 minutes until the rhubarb starts to soften. - Remove the saucepan from the heat, then gently stir in the raspberries. - Transfer the mixture to an 8-cup (2L) ovenproof dish.
  • In a bowl, combine butter, brown sugar, and flour. Use your fingertips to rub the butter into the flour mixture. Add oats, cornflakes, coconut, and almonds, then stir to combine. Spoon the mixture over the apples in the dish. Bake until the top is golden brown, about 20 minutes.
