Delightful rhubarb and strawberry crisp with buttery oat crust.
Ingredients:
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 0.5 cup brown sugar
  • 0.5 cup butter, melted
  • 2 cups chopped strawberries
  • 2 cups chopped rhubarb
  • 1 cup cold water
  • 0.5 cup white sugar
  • 1 tablespoon cornstarch
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Combine oats, flour, brown sugar, and butter until well mixed. Press the mixture evenly into a 9-inch pie pan, then layer with fresh strawberries and rhubarb.
  • Whisk together water, white sugar, and cornstarch in a saucepan. Simmer, whisking constantly, until the mixture bubbles and thickens. Pour over the fruit layer.
  • Bake in the preheated oven for 1 hour until bubbling.
