5-Ingredient Creamy Rhubarb Fool: Deliciously simple and irresistibly creamy dessert.
Ingredients:
  • 350g rhubarb
  • 189.38 gm thickened cream
  • 2 x 170g tubs blackcurrant and raspberry yoghurt
  • 100g peanut brittle, finely chopped
Instructions:
  • In a saucepan over medium heat, mix rhubarb, sugar, and 1/4 cup of cold water. Bring to a boil, then reduce heat to low and simmer covered for 5 to 7 minutes until tender. Allow to cool.
  • Whip cream with an electric mixer until soft peaks form, then gently fold in yogurt.
  • In four 2-cup glasses, create layers of rhubarb mixture, yogurt mixture, and brittle, beginning and ending with rhubarb mixture and brittle. Chill in the refrigerator for 30 minutes to enhance flavors. Serve.
