Rhubarb and yoghurt fool

Create a delicious rhubarb dessert with just 5 simple ingredients!
Ingredients:
  • 1 bunch rhubarb, leaves discarded
  • 40.00 gm caster sugar
  • 2.50 gm ground nutmeg
  • 4 x 150g tubs low-fat vanilla yoghurt
  • 8 slices almond bread, to serve
Instructions:
  • Prepare the rhubarb by trimming the ends and washing the stalks. Chop into 1cm pieces and place in a saucepan over medium heat. Drizzle with 1 tablespoon of water and add sugar. Cover and bring to a boil. Uncover and simmer, stirring occasionally, for 5 minutes until soft and pulpy. Move the mixture to a bowl and stir in nutmeg. Refrigerate covered for 1 hour until chilled.
  • In small serving bowls, alternate layers of yoghurt and rhubarb mixture. Swirl gently with a spoon and enjoy with almond bread.
