No-bake bars made with crisp rice cereal, dried fruit, and nuts for a portable and delicious energy boost on the go. Perfect for biking, hiking, or any adventure. Freeze individually for convenient grab-and-go snacks.
Ingredients:
  • 0.5 cup sesame seeds
  • 0.5 cup sunflower seeds
  • 1 pinch salt
  • 0.5 cup chopped dates
  • 0.5 cup raisins
  • 0.5 cup dried apricots
  • 0.5 cup dried cherries
  • 0.5 cup semisweet chocolate chips
  • 1 cup rolled oats
  • 7 cups crisp rice cereal
  • 1 cup corn syrup
  • 1 cup white sugar
  • 1.5 cups crunchy peanut butter
  • 1 cup powdered milk
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon almond extract
Instructions:
  • Toast fragrant sesame and sunflower seeds in a dry skillet over medium heat. Lightly salt, then let cool.
  • In a food processor, blend dates, raisins, apricots, cherries, chocolate chips, and toasted seeds until finely chopped but not paste-like. Transfer the mixture to a large bowl and combine with oats and crisp rice cereal.
  • Combine corn syrup, sugar, and peanut butter in a small glass bowl. Microwave until bubbly. Mix in powdered milk, vanilla, and almond extract. Pour over cereal and goodies, stirring until evenly coated with a wooden spoon.
  • Using moistened hands, firmly press the mixture into a greased 10x15 inch jellyroll pan. Once set, cut into squares and let cool fully before removing from pan.
