Savory rice, beans, and tomato medley ready in just 20 minutes.
Ingredients:
  • 1 onion, chopped
  • 1 tablespoon vegetable oil
  • 1 (14.5 ounce) can stewed tomatoes
  • 1 (15 ounce) can black beans, undrained
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon garlic powder
  • 1 cup instant white rice
Instructions:
  • In a large saucepan, sauté onion in oil until soft and translucent without browning. Add tomatoes, beans, oregano, and garlic powder. Bring to a boil, then stir in rice. Cover and simmer until rice is cooked.
  • Simmer the mixture for 5 minutes, then let it rest for 5 minutes before serving.
