Colorful dirty rice with black beans, corn, tomatoes, peppers, pine nuts, and spices. Perfect as a vibrant main or side dish.
Ingredients:
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup chopped onion
  • 1 green bell pepper, chopped
  • 1 tablespoon chili powder
  • 2 teaspoons annatto or achiote powder
  • 0.25 teaspoon crushed red pepper
  • 1 teaspoon ground cumin
  • 0.25 teaspoon ground cinnamon
  • 1.3333333730698 cups uncooked white rice
  • 2.75 cups water
  • 3 roma (plum) tomatoes, chopped
  • 1.3333333730698 cups whole corn kernels, blanched
  • 1 cup black beans, cooked and drained
  • 0.25 cup toasted pine nuts
  • freshly ground black pepper
  • 1 red onion, thinly sliced
  • 1 tablespoon fresh lime juice
  • 2 tablespoons chopped fresh cilantro
  • 1 lime, cut into wedges
  • 2 teaspoons annatto powder
Instructions:
  • In a heavy saucepan over medium heat, warm 1 tablespoon of olive oil. Add garlic and chopped onions, saute for 5 minutes, stirring often. Stir in bell pepper, chili powder, ground annatto, chili flakes, cumin, and cinnamon, then saute for 2 more minutes.
  • Add rice to saucepan, stir to coat, then add water and 1 teaspoon salt. Bring to a boil over high heat, cover, reduce heat to low, and simmer for 25 minutes.
  • Once the rice is done cooking, combine it with tomatoes, corn, black beans, and pine nuts. Add salt, pepper, and lime juice. Heat the mixture until warmed through. Plate the dish and garnish with sliced red onion and cilantro. Serve with lime wedges for squeezing over the rice.
