Veggie-packed fiesta flats with cauliflower rice and zesty fajita seasoning for a delicious vegetarian twist on taco night.
Ingredients:
  • 1 package Ortega® Fiesta Flats™
  • 2 (12 ounce) packages Green Giant® Riced Veggies Cauliflower
  • 1 (1.25 ounce) package Ortega® Fajita Seasoning Mix
  • 1 large orange bell pepper, diced
  • 1 cup shredded red cabbage
  • 1 tablespoon Chopped green onions
Instructions:
  • In a large skillet, cook riced cauliflower for 5 minutes until tender. Stir in fajita seasoning until well mixed.
  • Saute diced bell pepper in skillet until just heated through.
  • Stuff each Fiesta Flat with the flavorful cauliflower-bell pepper mixture.
  • Sprinkle cabbage and green onions over each taco for a fresh and crunchy finish.
