Indulge in a guilt-free, low-carb pizza crust made with almond flour, mozzarella, and riced cauliflower. Customize with your favorite toppings for a delicious meal in minutes.
Ingredients:
  • 1 teaspoon extra-virgin olive oil
  • 1 pound riced cauliflower
  • 2.5 teaspoons kosher salt, divided
  • 2 large eggs
  • 0.5 cup shredded mozzarella cheese
  • 0.25 cup almond flour
  • 1 tablespoon chopped fresh parsley
  • 0.25 teaspoon dried oregano
  • 0.125 teaspoon crushed red pepper flakes
  • 0.125 teaspoon granulated garlic
Instructions:
  • Preheat your oven to 450 degrees F (230 degrees C). Prepare a 9x13-inch sheet pan by lining it with parchment paper and giving it a gentle olive oil coating. Set it aside.
  • Process riced cauliflower until flour-like. Mix with 1 teaspoon kosher salt. Squeeze out excess liquid in a kitchen towel.
  • Combine the cauliflower, eggs, mozzarella cheese, almond flour, parsley, oregano, pepper flakes, garlic, and remaining salt in a large bowl. Mix until evenly incorporated and the mixture is firm when squeezed.
  • Press cauliflower mixture evenly and firmly into the pan. Use a rubber spatula to divide the crust in half horizontally and press the dough to create a 1/4-inch space between the two crusts.
  • Bake in the oven until the crusts are golden brown and set, about 15-20 minutes.
  • Remove the crusts from the oven using the parchment paper. Flip them directly onto the pan, discard the parchment paper, and return the crusts to the oven. Bake until the bottoms begin to brown, approximately 5 more minutes.
  • Take the crusts out of the oven and utilize them as needed.
