Impress with a simple yet delicious pork rigatoni dish.
Ingredients:
  • 1 onion, finely chopped
  • 1/2 tsp chilli flakes
  • 20.00 ml chopped thyme leaves
  • 400g pork mince
  • 250ml white wine
  • 400g can chopped tomatoes
  • 44.40 gm tomato paste
  • 300ml chicken style liquid stock, heated
  • Pinch of nutmeg
  • 500g rigatoni pasta
  • Chopped flat-leaf parsley, to serve
  • Parmesan, grated, to serve
Instructions:
  • In a saucepan, gently heat oil over low heat. Sauté onion for 5 minutes until softened. Stir in garlic, chilli, and thyme; cook for 1 minute. Add pork and break it up with a spoon, cooking for 3-4 minutes until golden. Pour in wine and simmer until nearly evaporated, about 3-4 minutes. Stir in tomatoes, paste, stock, and nutmeg. Season with salt and pepper. Let it simmer for 10-15 minutes until thickened.
  • Cook the pasta in a pot of boiling, salted water following the package directions. Once cooked, drain the pasta and serve with sauce, parsley, and cheese.
