Spicy rigatoni recipe for two, great for a quick and flavorful meal with leftovers.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 3 cloves garlic, finely chopped
  • 2-3 long red chillies, finely chopped
  • 1 quantity basic rissoles, using pork mince (see related recipe)
  • 80ml white wine
  • 70g tomato paste
  • 800g can diced Italian tomatoes
  • 80ml cream
  • 500g rigatoni or penne rigate
  • 250.00 ml fresh basil leaves, torn
  • Salt & pepper to taste
Instructions:
  • Follow the steps to prepare the rissole mixture as described in the Brunch Rissole recipe. In a large pan over medium heat, heat oil. Sauté garlic and chillies for 1 minute. Add rissoles and break them up using a wooden spoon. Cook until the meat is browned. Stir in wine, tomato paste, tomatoes, and cream. Simmer uncovered, stirring occasionally for about 20 minutes until the sauce has thickened. Season to taste.
  • Cook rigatoni in flavorful salted boiling water until perfectly al dente, then drain thoroughly. Combine the pasta with the aromatic sauce and fresh basil, and serve promptly.
