Heart Healthy Yogurt Waffles: Wholesome grains mixed with yogurt for a delicious and nutritious breakfast treat.
Ingredients:
  • 3/4 cup old-fashioned oats
  • 1 cup fat-free (skim) milk
  • 1 cup Yoplait® Fat Free plain yogurt (from 2-lb container)
  • 1/4 cup real maple or maple-flavored syrup
  • 1/4 cup fat-free egg product or 2 egg whites, slightly beaten
  • 3 tablespoons canola or soybean oil
  • 2/3 cup Gold Medal™ all-purpose flour
  • 2 tablespoons ground flaxseed or wheat germ
  • 2 teaspoons baking powder
  • 1 teaspoon grated orange peel, if desired
  • 1/4 teaspoon baking soda
Instructions:
  • Combine oats, brown sugar, and milk in a large bowl, and allow to sit for 10 minutes. In a separate small bowl, mix yogurt and maple syrup until smooth; refrigerate until ready to serve.
  • Combine egg product and oil with the oat mixture until fully incorporated. Gently fold in remaining ingredients until well mixed. Allow mixture to rest for an additional 5 minutes. While waiting, preheat waffle maker and lightly grease with vegetable oil or cooking spray if needed.
  • Place a generous amount of batter in the middle of the preheated waffle maker and spread it evenly towards the edges. Follow the manufacturer's guidelines for the perfect amount of batter. Close the lid to let the magic happen.
  • Bake for 4 to 5 minutes until steaming stops and waffle is golden brown. Carefully remove waffle and repeat with remaining batter. Serve waffles with your favorite toppings.
