Inspired by Cuban flavors and the iconic sandwich from a local lunch spot called 'El Rey de Sandwich Cubano'.
Ingredients:
  • 1 (16 ounce) package fully cooked pulled pork without the sauce*
  • 10 (1/2 ounce) slices thin sliced smoked deli ham, cut in half
  • 5 thin slices baby Swiss cheese, cut into quarters
  • 20 Kosher dill pickle chips
  • 0.25 cup Dijon mustard
  • 40 RITZ Crackers
  • 20 frilled toothpicks
Instructions:
  • Preheat the broiler on HIGH and position an oven rack 5 to 6 inches away from the heat source. Line a large baking sheet with foil.
  • Use two forks to shred any large pieces of the packaged pulled pork. Then, sandwich the pork between layers of paper towels and press down to remove excess moisture. This will ensure the cracker stays crisp when served.
  • On the prepared baking sheet, arrange 20 RITZ Crackers flat side up. Add a generous tablespoon of pulled pork on each cracker. Fold a half slice of ham into thirds and place on top of the pulled pork, then add quarter-slices of baby Swiss cheese on top of the ham.
  • Broil the baking sheet until the cheese is melted and bubbly, for about 1 to 2 minutes. Remove from the broiler.
  • Place a 1/2 pickle slice and approximately 1/2 tsp mustard on each mini bite, then cover with the remaining crackers, flat side facing down.
  • Delicately secure a stylish toothpick into the center cavity of the RITZ Cracker to enhance its presentation and stability.
  • Enjoy while still hot and fresh.
