Enjoy the iconic taste of a New York steakhouse in a bite-sized RITZ Steakhouse Bite!
Ingredients:
  • 2 teaspoons olive oil
  • 1 (6 ounce) package baby spinach leaves
  • 1 tablespoon minced shallots
  • 0.5 teaspoon nutmeg
  • 2 tablespoons heavy cream
  • 0.125 teaspoon salt
  • Pinch of black pepper
  • 2 tablespoons minced shallots
  • 1 tablespoon white wine vinegar
  • 1 egg yolk
  • 1 tablespoon lemon juice
  • 0.5 cup melted butter
  • 18 RITZ Crackers
  • 3 ounces thinly sliced, cooked beef tenderloin, but into bite-sized pieces
Instructions:
  • In a saute pan over medium heat, warm olive oil. Add spinach and cover to steam for 1 minute. Uncover and stir until wilted. Drain, pat dry with paper towels, and chop. In the same pan, melt butter over medium heat. Saute shallots for a minute. Stir in heavy cream and nutmeg. Add chopped spinach and mix well. Cook until creamy. Season with salt and pepper. Keep aside.
  • In a separate saute pan, melt 1 tablespoon of butter. Add shallots and white wine vinegar and cook until all liquid has evaporated, approximately 1 minute. Remove from the pan and set aside to cool.
  • Combine egg yolk and lemon juice in a blender. Gradually blend in 1/2 cup of melted butter until smooth and creamy. Pour the mixture into the shallots. Stir in chopped fresh tarragon.
  • For each bite, layer a RITZ Cracker with 1-1/2 teaspoons of creamed spinach, a slice of steak, and 1-1/2 teaspoons of bearnaise sauce drizzled on top.
