Ritz cracker pie crust filled with lemony sweet syrup and baked to golden perfection.
Ingredients:
  • 1 recipe pastry for a 9 inch single crust pie
  • 1.75 cups crushed buttery round crackers
  • 2 teaspoons cream of tartar
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 2 cups water
  • 2 tablespoons butter
  • 0.5 teaspoon ground cinnamon
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C).
  • Roll out half of the pastry and gently line a 9-inch pie plate, then add the crackers to the crust.
  • In a saucepan, bring water, sugar, and cream of tartar to a boil over high heat. Simmer for 15 minutes. Add lemon juice and rind, then cool.
  • 1. Drizzle syrup over the crackers and top with butter or margarine. Sprinkle with cinnamon. Cover with remaining pastry, seal, and flute edges. Make slits on top crust to release steam.
  • Bake in a hot oven for 30 to 35 minutes until the crust is crisp and golden. Allow the pie to cool completely before serving.
