Spiced zucchini rings pickled with cinnamon and RedHot candies for a unique and flavorful twist.
Ingredients:
  • 4 cups zucchini, sliced
  • 1 cup pickling lime (calcium hydroxide)
  • 1 cup distilled white vinegar
  • 1 fluid ounce bottle of red food coloring
  • 0.75 teaspoon alum
  • 5 cups white sugar
  • 3 cups water, or amount to cover
  • 4 cinnamon sticks
  • 0.5 cup cinnamon red hot candies
Instructions:
  • In a large glass jar or crock, layer zucchini slices. Combine 2 cups water (or enough to cover zucchini) and pickling lime in a nonreactive bowl. Pour mixture over zucchini, ensuring it's fully submerged. Cover with plastic wrap and let it sit for 24 hours.
  • After draining zucchini slices in a colander, rinse them thoroughly under running water to remove all lime residue. Wash the glass jar well and return zucchini slices back to it. Cover with fresh cool water and let stand for 2 to 3 hours.
  • After rinsing, transfer the zucchini to a pot. Mix in 1 cup of vinegar, food coloring, and alum. Pour in enough water to cover the zucchini. Bring to a boil, then simmer over low heat for 2 hours. Drain and discard liquid before returning zucchini to the jar.
  • In a saucepan over medium heat, mix sugar, 3 cups water, 1 cup vinegar, Red Hot candies, and cinnamon sticks. Boil the mixture, stirring until sugar and candies dissolve. Pour the syrup over zucchini, cover, and allow to sit for 24 hours to marinate.
  • After straining the zucchini, save the syrup. In a saucepan over medium heat, bring the reserved syrup to a vigorous boil.
  • Prepare eight half-pint canning jars and lids by sterilizing them in boiling water for at least 5 minutes.
  • Arrange zucchini slices snugly in sterilized jars. Fill jars with hot syrup, leaving 1/4 inch of space from the top. Gently run a knife around the jars to release air bubbles. Clean the rims with a damp paper towel. Seal with lids and secure tightly with rings.
  • Place a rack in a large stockpot, fill halfway with water, and bring to a boil. Carefully lower jars into the boiling water, making sure they are 2 inches apart. Add more boiling water if needed to cover jars by at least 1 inch. Cover and process at a rolling boil for 20 minutes.
  • After boiling, let the jars cool on a cloth or wood surface for 12 to 24 hours, ensuring the lids are sealed tight before storing in a cool, dark place without the rings.
