Garlic and coffee infused pot roast slow-cooked for tender perfection in 6-8 hours or oven-ready in half the time.
Ingredients:
  • 4 pounds chuck roast
  • 5 cloves garlic, minced
  • 1.5 cups prepared strong coffee
  • 0.5 cup water
Instructions:
  • With precision, create five deep slits around the roast's top and side using a sharp knife, then insert one garlic clove into each slit.
  • Add the roast to a slow cooker and generously pour fragrant coffee over it. Cover and cook on Low until the roast is beautifully browned and perfectly tender, which should take around 3 hours. Verify the roast is ready by inserting an instant-read thermometer into the thickest part; it should show 145 degrees F (65 degrees C). This entire process typically takes 6 to 8 hours.
  • Place the cooked roast on a beautiful serving platter. In a small saucepan over medium-low heat, warm up the flavorful drippings. In a separate bowl, combine water and cornstarch, then gradually add this mixture into the saucepan with drippings. Stir constantly until the gravy thickens, about 3 to 5 minutes. Finally, serve this delicious gravy alongside the roast.
