Turn leftover roast beef into a delicious pilaf in no time.
Ingredients:
  • 40g butter
  • 1 brown onion, finely chopped
  • 1 long red chilli, deseeded, finely chopped
  • 300.00 gm Basmati rice
  • 765.00 gm chicken style liquid stock
  • 250.00 ml coriander leaves
  • 320g sliced rare roast beef
  • Harissa (see note), to serve
  • Yoghurt, to serve
Instructions:
  • 1. Preheat the oven to 180°C. 2. In a non-stick frying pan over medium heat, melt the butter. 3. Add the onion and cook for 3 minutes, or until tender. 4. Add the chilli and rice, stirring until well combined. 5. Pour in the stock and bring to a boil.
  • Transfer mixture to a heatproof dish, cover with foil, and bake in the oven for 20-25 minutes, or until the rice is tender.
  • Season rice with fragrant coriander, salt, and pepper, combining thoroughly. Plate pilaf elegantly. Enjoy with savory beef, spicy harissa, and creamy yogurt.
