Mouthwatering roast pork with crispy breadcrumbs, toasted pine nuts, and tangy feta.
Ingredients:
  • 375.00 ml fresh white breadcrumbs
  • 1 pkt rocket, trimmed, chopped
  • 50g pine nuts, toasted
  • 180g persian feta, drained, (oil and garlic reserved)
  • 2kg rolled pork loin roast
  • 18.20 gm olive oil
  • 19.20 gm salt
  • 1 egg, lightly beaten
Instructions:
  • Preheat your oven to a toasty 230C (or 210C for fan-forced ovens).
  • In a large bowl, mix together breadcrumbs, rocket, and pine nuts. Chop the reserved garlic from the feta and add it to the breadcrumbs along with the feta, reserved feta oil, and egg. Combine everything well.
  • Take the pork out of the netting and place it flat on a clean board with the skin side facing up. Score the skin with a sharp knife, then flip the pork over and gently pound it to flatten. Spread the stuffing in the center of the pork, fold the pork over the stuffing, and tie it up with kitchen string to secure it.
  • Drizzle the skin with oil, massage in the salt, then place on a rack in a baking pan. Bake for 30 mins at 220C or 180C fan-forced. Continue baking for 60-90 mins until fully cooked. Rest covered with foil for 15 mins before slicing. Serve with Apple & Fig Compote.
