Delicious roast pork topped with crispy breadcrumbs, toasted pine nuts, and tangy feta.
Ingredients:
  • 375.00 ml fresh white breadcrumbs
  • 1 pkt rocket, trimmed, chopped
  • 50g pine nuts, toasted
  • 180g persian feta, drained, (oil and garlic reserved)
  • 2kg rolled pork loin roast
  • 19.20 gm salt
  • 1 egg, lightly beaten
Instructions:
  • Preheat oven to 230°C (or 210°C for fan-forced).
  • In a large bowl, mix together breadcrumbs, arugula, pine nuts. Chop the garlic reserved from the feta and add it to the bowl with the feta, reserved feta oil, and egg. Gently combine all ingredients until well mixed.
  • Unwrap the pork and lay it flat, with the skin side up, on a clean board. Score the skin with a sharp knife, then flip the pork over and gently pound it flat. Spread the stuffing in the center of the pork, fold the pork over the stuffing, and secure the roast by tying it up with kitchen string.
  • Drizzle oil and season with salt all over the skin. Set a rack in a baking pan and bake at 425°F or 355°F fan-forced for 30 minutes. Lower the heat to 430°F or 355°F fan-forced and continue baking for 60-90 minutes until fully cooked. Rest loosely covered with foil for 15 minutes before slicing. Serve alongside Apple & Fig Compote.
