Roast tomato, wild rocket & macadamia salad

Ingredients:
  • 3 small vine-ripened tomatoes
  • Sea salt
  • 300g wild rocket leaves
  • 100g macadamia nuts, roasted, chopped
  • 4.50 gm sugar
  • 50ml olive oil
  • 50ml macadamia nut oil*
  • 40ml (2 tbsp) white wine vinegar
  • 5.90 gm Dijon mustard
  • 14.40 gm Australian honey
Instructions:
  • Quarter the tomatoes and toss them with a sprinkling of sugar, salt, and pepper. In a hot non-stick pan, char the tomatoes cut-side down until lightly caramelized. Allow them to cool before serving.
  • Combine the rocket, tomato, and macadamia nuts in a beautiful serving bowl.
  • Combine the remaining ingredients in a bowl and whisk until well mixed. Drizzle the dressing over the salad and enjoy.
