Roast tomato caprese recipe

Italian-inspired roasted tomatoes with gooey melted cheese - a cozy winter side dish.
Ingredients:
  • 6 roma tomatoes, halved lengthways
  • 3 fresh oregano sprigs
  • 56.88 gm extra virgin olive oil
  • 82.50 ml finely grated parmesan
  • 120g bocconcini, torn
  • 20.00 ml finely chopped fresh basil
  • 20.00 ml white balsamic
  • Basil leaves, to serve
Instructions:
  • 1. Preheat your oven to 200C/180C fan-forced and lightly grease a baking tray with sides. 2. Arrange the tomato halves cut-side up on the tray and sprinkle them with oregano. 3. Drizzle 2 tablespoons of oil over the tomatoes and season with salt and pepper.
  • Roast the dish for 20 to 25 minutes until tender and slightly caramelized. Sprinkle the tomato with Parmesan, then top with bocconcini. Bake for an additional 5 minutes until the cheese is gooey and melted to perfection.
  • In a small bowl, mix together fresh basil, balsamic vinegar, and the rest of the olive oil. Season with salt and pepper to taste.
  • Drizzle tomato with dressing, sprinkle extra basil leaves, and serve.
