Roasted acorn squash with melted butter, pepper, and Parmesan - a deliciously savory side for fall.
Ingredients:
  • 2 small acorn squash, seeded and quartered
  • 1 teaspoon olive oil, or as needed
  • 1 teaspoon coarse salt, or to taste
  • 2 tablespoons unsalted butter, melted
  • ground black pepper to taste
  • 2 tablespoons freshly grated Parmesan cheese, or to taste
Instructions:
  • Preheat the oven to 400°F (200°C) and lightly coat a baking sheet with olive oil.
  • Arrange the quartered squash, skin-side down, on the baking sheet. Lightly sprinkle with a touch of salt.
  • Roast the squash in the oven until fork-tender, for approximately 40 minutes.
  • Once baked, coat the squash pieces with rich melted butter, then add a dash of pepper and a generous sprinkle of savory Parmesan cheese.
