Ingredients:
  • 1 acorn squash
  • 2 tablespoons olive oil
  • 2 tablespoons grated Parmesan cheese, or more to taste
Instructions:
  • Preheat the oven to 350°F (175°C) to create the perfect baking environment.
  • Prepare the squash by peeling, seeding, and chopping it into medium-small pieces. Transfer the chopped squash into a baking dish, drizzle with olive oil, and mix well to coat. Season with salt and pepper, tossing once more to ensure even distribution.
  • Roast the squash in the preheated oven until lightly browned, about 40 minutes. Sprinkle with Parmesan cheese and continue roasting until the cheese begins to melt, about 5 minutes.
