Cheesy Parmesan roasted acorn squash slices with thyme, a perfect fall side dish.
Ingredients:
  • 1 (2 pound) acorn squash - halved lengthwise, seeded, and cut into 3/4-inch slices
  • 0.25 cup grated Parmesan cheese
  • 8 sprigs fresh thyme
  • 2 tablespoons olive oil
  • 0.5 teaspoon kosher salt, or to taste
  • 0.25 teaspoon ground black pepper, or to taste
Instructions:
  • Preheat the oven to 400°F (200°C) for the perfect cooking temperature.
  • Coat squash slices in a flavorful mix of Parmesan, fresh thyme, oil, salt, and pepper. Spread the coated squash in a single layer on a jelly roll pan.
  • Roast in the oven until the squash is golden brown and tender, for 25 to 30 minutes.
