Roasted Acorn Squash with Sriracha Butter

"Enhance the natural sweetness of roasted acorn squash with a spicy Sriracha butter drizzle."
Ingredients:
  • 1 (2 pound) acorn squash
  • 2 tablespoons Sriracha sauce
  • 2 teaspoons honey
  • salt and freshly ground black pepper to taste
Instructions:
  • Preheat the oven to 400°F (200°C) while lining a baking sheet with parchment paper.
  • Halve the squash vertically and remove the seeds. Cut each half into 4 wedges and arrange them on the baking sheet.
  • In a small saucepan, gently melt butter over medium-low heat. Stir in Sriracha sauce and honey until well combined. Keep the sauce warm.
  • Drizzle squash with olive oil; season with salt and pepper. Arrange wedges on their sides and roast for 20 minutes. Turn wedges and continue roasting until squash is tender and edges are golden brown, 15 to 20 minutes more.
  • Arrange the wedges elegantly on a serving platter then generously drizzle them with delicious Sriracha butter.
