Indulge in luxury with a perfectly cooked beef tenderloin roast. Cook 2 1/2 lbs for 40-50 minutes until a meat thermometer reads 140°F. Simple elegance at its finest for this top-tier cut of meat.
Ingredients:
  • 1 beef tenderloin (about 2 1/2 pounds)
  • 1 tablespoon olive or vegetable oil
  • 1/2 teaspoon coarsely ground pepper
  • 1/2 teaspoon dried marjoram leaves
  • 1/4 teaspoon coarse kosher salt, coarse sea salt or regular salt
Instructions:
  • Preheat oven to 425°F.
  • Prepare the beef by folding the small end under about 6 inches and tying it with string at 1 1/2-inch intervals. Put the beef on a rack in a shallow roasting pan. Brush it with oil, and sprinkle with pepper, marjoram, and salt. Place a meat thermometer into the thickest part of the beef.
  • Bake uncovered for 40 to 50 minutes until the thermometer reads at least 140°F. Tent the beef with aluminum foil and allow it to rest for about 15 minutes until the thermometer reads 145°F. Remove the string from the beef before carving. This resting period will ensure the temperature rises by 5°F and make the beef easier to carve.
