Roasted Brussels sprouts with pomegranate-balsamic glaze: a flavorful side perfect for holidays.
Ingredients:
  • For the glaze:
  • 1 cup pomegranate juice
  • 2/3 cup balsamic vinegar
  • 2 tablespoons brown sugar
  • For the Brussels sprouts:
  • 1 1/2 pounds Brussels sprouts
  • 3 tablespoons olive oil
  • 1/2 to 2/3 cup pomegranate arils
Instructions:
  • Prepare the glaze by heating a mixture of pomegranate juice, balsamic vinegar, and brown sugar until it thickens into a syrupy texture that coats the back of a spoon, stirring occasionally. This should yield approximately 2/3 cup of flavorful pomegranate balsamic glaze. Store in the refrigerator after cooling.
  • Preheat oven to 375F and prepare 2 baking sheets lined with parchment paper on the upper and lower racks.
  • Prepare the Brussels sprouts by trimming and slicing them in half. Quarter any very large sprouts. Combine with olive oil and a pinch of salt. Spread evenly on 2 baking sheets and roast for 20 to 25 minutes, stirring midway.
  • Drizzle the Brussels sprouts with 2 to 3 tablespoons of the pomegranate balsamic reduction, add the pomegranate arils, and let them cool briefly. Adjust the glaze to taste. Serve hot and enjoy! Feel free to rate and leave feedback!"
