Transform cabbage into flavorful Roasted Cabbage Steaks, elevated with crispy garlic breadcrumbs for a delightful vegetarian dinner.
Ingredients:
  • 1 (2- to 3-pound) green cabbage
  • 2 1/2 tablespoons olive oil, divided
  • 2 teaspoons soy sauce
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon honey
  • 1/2 teaspoon kosher salt, divided
  • 1/4 teaspoon freshly ground black pepper
  • 1 clove garlic, minced
  • 1/2 cup panko breadcrumbs
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons finely chopped fresh parsley
Instructions:
  • Preheat the oven to 450°F and line a large, rimmed baking sheet with parchment paper.
  • Prepare the cabbage: Remove and discard any dried and browned outer leaves of the cabbage. Place the cabbage on a cutting board with the stem end to your side. Slice into 1-inch cabbage steaks using a sharp chef’s knife, ensuring they stay intact. Aim for 4 to 6 slices based on the cabbage size. Discard the tough stem end. Arrange the cabbage steaks in a single layer on the baking sheet, allowing sides to touch. Use an additional sheet if needed.
  • Prepare the sauce by mixing 1 1/2 tablespoons olive oil, soy sauce, lemon juice, paprika, and honey in a small bowl. Whisk with a fork until the honey is completely dissolved. Brush half of the sauce over the cabbage slices, then gently flip them and brush the other side with the remaining sauce. Sprinkle both sides of the cabbage steaks with 1/4 teaspoon kosher salt and black pepper to season.
  • Achieve perfectly roasted cabbage steaks: Oven-roast the cabbage at 400°F until golden brown edges, a crispy-tender center, and easily pierced with a fork, approximately 25 minutes.
  • Prepare the topping by heating 1 tablespoon of olive oil in a small skillet over medium heat until shimmering. Sauté the garlic for about 30 seconds until fragrant but not browned. Add panko breadcrumbs, red pepper flakes (if using), and 1/4 teaspoon salt. Coat the panko well in the garlic oil and toast until golden brown, about 3 minutes. Remove from heat and stir in the parsley.
  • Serve the roasted cabbage steaks on a platter or individual plates, and sprinkle the garlic breadcrumbs on top just before serving using a large spatula.
