Zesty orange and coriander roasted carrots with savory garlic breadcrumbs—perfect side for any meat or poultry dish.
Ingredients:
  • 6 carrots, peeled
  • 0.333 cup orange juice
  • 2 tablespoons water
  • 0.5 teaspoon ground coriander
  • 0.25 teaspoon salt
  • 0.25 teaspoon freshly ground black pepper
  • 2 tablespoons butter, melted, divided
  • 0.25 cup panko bread crumbs
  • 1 teaspoon orange zest
  • 2 cloves garlic, minced
  • chopped fresh parsley for garnish
Instructions:
  • Preheat the oven to a toasty 450 degrees F (230 degrees C).
  • Cut the carrots diagonally into long 3/8-inch-thick slices. Place them in a 9x13-inch baking dish. Add orange juice, water, coriander, salt, and pepper; mix well to coat evenly.
  • Roast until golden and tender, about 30-35 minutes, turning halfway through and basting with 1 tablespoon of melted butter (add more water if needed to prevent scorching).
  • Combine bread crumbs, 1 tablespoon melted butter, orange zest, and garlic in a bowl. Sprinkle mixture over carrots and roast until bread crumbs are lightly browned, approximately 5 minutes. Top with chopped parsley leaves to serve.
