Sweet and juicy roasted cherry tomatoes tossed in olive oil and balsamic vinegar, a perfect summer topping for pasta.
Ingredients:
  • 0.25 cup olive oil
  • 1 tablespoon balsamic vinegar
  • 1.5 teaspoons salt
  • 0.25 teaspoon ground black pepper
  • 3 pints cherry tomatoes
Instructions:
  • Preheat the oven to 350°F (175°C) for a perfect bake.
  • In a large bowl, vigorously blend olive oil, balsamic vinegar, salt, and pepper until fully mixed. Add cherry tomatoes and gently mix until coated. Transfer the mixture to a rimmed baking sheet, spreading it out evenly.
  • Roast in the hot oven until skins are slightly shriveled, about 35 to 40 minutes.
