Spicy roasted sweet potatoes inspired by garlic mashed potatoes.
Ingredients:
  • 4 sweet potatoes
  • 2 heads garlic
  • 2 tablespoons olive oil
  • 2 tablespoons butter (at room temperature)
  • 0.75 cup light sour cream
  • 0.5 cup reduced-fat cream cheese
  • 0.5 teaspoon cayenne pepper
Instructions:
  • Preheat the oven to 400°F (200°C).
  • Pierce sweet potatoes all over with a fork or paring knife. Trim off the top of the garlic heads to reveal the cloves, brushing them with olive oil, and wrap each head in foil.
  • Place sweet potatoes and garlic cloves directly on oven racks. Bake for approximately 1 hour, removing sweet potatoes when softened and garlic when tender and nicely browned.
  • Peel the sweet potatoes and place them in a mixing bowl. Squeeze in the garlic cloves, add butter, sour cream, cream cheese, and cayenne pepper. Mash until smooth, then season with salt and pepper. Transfer the mashed potatoes to a 1 1/2 quart baking dish and reheat in the oven for about 15 minutes.
