Roasted Maple Rum Turkey Breast with Sweet Potato Stuffing

Ingredients:
  • 12 slices white whole-grain bread, cut into 1/2-inch cubes (7 cups)
  • 1 tablespoon olive oil
  • 3/4 cup chopped onion
  • 1/2 cup sliced celery
  • 1 large sweet potato (about 12 oz), peeled, cut into 1/2-inch cubes (2 cups)
  • 1/3 cup sweetened dried cranberries
  • 1 can (14 oz) reduced-sodium chicken broth
  • 1 tablespoon chopped fresh or 1 teaspoon dried sage leaves
  • 1 1/2 teaspoons chopped fresh or 1/2 teaspoon dried thyme leaves
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 whole turkey breast (4 1/2 to 5 lb), thawed if frozen
  • 1/3 cup real maple syrup
  • 2 tablespoons dark rum
Instructions:
  • Preheat oven to 350°F and lightly grease a 13x9-inch (3-quart) glass baking dish with cooking spray. Spread bread cubes on a rimmed baking sheet and bake for 15 minutes, stirring halfway through, until they turn a light golden brown.
  • Heat oil in a large nonstick skillet over medium-high heat. Sauté onion and celery for 4 to 5 minutes until crisp-tender. In a large bowl, combine onion mixture with toasted bread cubes and remaining stuffing ingredients. Transfer the mixture to a baking dish.
  • Place the turkey breast, skin side up, in the center of the baking dish on top of the stuffing. Insert an ovenproof meat thermometer into the thickest part of the breast without touching the bone. Cover the stuffing with two pieces of foil while leaving the turkey uncovered. Roast for 1 hour.
  • In a 1-quart saucepan, bring the syrup, rum, and 1/4 teaspoon salt to a boil without stirring. Let it boil uncovered for 3 to 4 minutes until the mixture coats the back of a spoon.
  • 1. Glaze the turkey with half of the glaze and roast for 30 minutes. 2. Brush the turkey with the remaining glaze and continue roasting for an additional 15 to 45 minutes or until a thermometer reads at least 165°F. 3. Transfer the turkey to a serving platter and tent with foil. Let it rest for 15 minutes to make carving easier. 4. While the turkey rests, stir the stuffing and bake uncovered for an additional 15 to 20 minutes.
