Herb-infused roasted potatoes and carrots, a flavorful and tender side dish for any meal.
Ingredients:
  • 6 medium potatoes, peeled and cubed
  • 6 medium carrots, chopped
  • 0.5 cup olive oil
  • 5 cloves garlic, minced
  • 1 tablespoon chopped fresh rosemary, or more to taste
  • 1 tablespoon chopped fresh oregano, or more to taste
  • 1 tablespoon kosher salt
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon chili powder
Instructions:
  • Preheat the oven to a piping hot 450 degrees F (230 degrees C).
  • Combine potatoes and carrots in a baking pan with olive oil, garlic, rosemary, oregano, salt, pepper, and chili powder until evenly coated.
  • Bake in the preheated oven for about 35 minutes until fork-tender. Allow to cool before serving.
