Tender slow cooker roast beef with creamy celery gravy, served with roasted potatoes and carrots.
Ingredients:
  • 1 pound baby red potatoes, halved
  • 1 (16 ounce) package baby carrots
  • 1 yellow onion, quartered
  • 1 (10 ounce) can condensed cream of celery soup
  • 1 (1.5 ounce) package beef stew seasoning mix
  • 1 (3 pound) beef chuck roast
  • 1 (1 ounce) envelope onion soup mix (such as Lipton® Beefy Onion)
Instructions:
  • Place the potatoes, carrots, and onion along the perimeter of a 5- to 6-quart slow cooker.
  • Combine the celery soup and beef stew seasoning mix in a bowl, whisking until luxurious and well blended.
  • 1. Heat a saucepan over medium-high heat. Sear the roast for 3 minutes per side until browned. 2. Sprinkle onion soup mix over the entire roast, then place the roast in the center of the slow cooker, surrounding it with the vegetable mixture. 3. Spread the celery soup mixture evenly over the roast.
  • Slow cook for 8 to 10 hours on Low heat.
  • Transfer the roast from the slow cooker to a cutting board and allow it to rest for 10 minutes.
  • Pour the remaining liquid from the slow cooker into a bowl and vigorously whisk until it's smooth, should take about 1 minute.
  • Carve the roast and plate it with the vegetables and gravy.
