  • 15 pounds charcoal briquets
  • 2 pounds hickory wood chips
  • 1 cup bourbon whiskey
  • 1 (4 pound) standing rib roast, bone in
  • 0.5 cup steak seasoning
Instructions:
  • Begin by lighting a minimum of 10 pounds of charcoal in a torpedo style smoker to create a robust fire. Fill the secondary pan with cold water. Allow the coals to burn until they turn white. Next, soak hickory chips in bourbon and enough water to cover them completely. Finally, generously coat all surfaces of the roast with steak seasoning.
  • Once the coals are hot, position the roast on the top grate. Toss soaked hickory chips onto the fire, then close the lid. Monitor and replenish charcoal every 45 minutes to maintain heat, adding wood chips each time you refill. Roast for 8 to 10 hours, or until preferred doneness, aiming for a rare internal temperature of 145 degrees F (65 degrees C. Test with a meat thermometer, adjusting to personal preference.
