Roasted radishes and onions are a flavorful, low-carb alternative to potatoes, accentuating the veggies' natural sweetness.
Ingredients:
  • 1 bunch radishes, trimmed and halved
  • 1 medium onion, halved and sliced
  • 0.5 teaspoon lemon zest
  • 0.25 teaspoon dried thyme
  • 0.25 teaspoon dried dill
  • 0.25 teaspoon garlic powder
  • 1 pinch salt and ground black pepper to taste
  • 3 tablespoons olive oil
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and prepare a baking sheet with parchment paper.
  • Combine radishes, onion, lemon zest, thyme, dill, garlic powder, salt, and pepper in a bowl. Drizzle with olive oil, toss well to coat, then spread evenly on a baking sheet.
  • Roast in the oven, stirring occasionally, until edges are starting to brown and radishes are fork-tender, for about 20 to 25 minutes. Season with more salt to taste.
