Roasted Radishes with Radish Greens

Roasted radish roots paired with sautéed radish greens, onion, and garlic for a fresh garden-inspired dish.
Ingredients:
  • 2 pounds radishes with greens attached
  • 2 tablespoons unsalted butter, melted
  • 2 teaspoons minced garlic, divided
  • 1 teaspoon sea salt
  • 0.5 teaspoon ground white pepper
  • 1 teaspoon olive oil
  • 1 small red onion, julienned
Instructions:
  • Preheat the oven to a toasty 425 degrees F (220 degrees C).
  • Separate the greens from the radishes. Clean and soak the greens until all dirt is removed and the water runs clear. Set aside to dry. Rinse and dry the radishes, then halve them.
  • Combine butter, 1 teaspoon of minced garlic, salt, and pepper in a medium bowl. Toss in radishes until coated. Place radishes on a baking sheet cut-side down.
  • Roast in the preheated oven until radishes are tender and easily pierced with a fork, for 15 to 20 minutes.
  • As radishes roast, gently warm olive oil in a large skillet. Cook onion in the fragrant oil until nearly tender, around 5 minutes. Toss in greens and the additional teaspoon of garlic. Sauté until greens are just wilted, for 5 to 8 minutes.
  • Serve the sautéed greens and onions on individual plates and garnish with the roasted radishes.
