Tangy skillet-roasted radishes with zesty mint gremolata, perfect for a refreshing and easy side dish using seasonal produce.
Ingredients:
  • 1 tablespoon olive oil
  • 1 pound radishes, halved (or quartered, if large)
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper, plus more for garnish
  • 1 tablespoon water
  • 1 tablespoon lemon juice
  • 2 cloves garlic, finely chopped
  • 1 tablespoon chopped fresh mint
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon lemon zest
  • Flaky salt, for garnish
Instructions:
  • In a very large skillet over medium-high heat, heat oil until shimmering. Add radishes cut sides down, season with salt and pepper, and cook until golden and blistered, about 5 minutes. Pour in water, cover, and simmer over medium heat until radishes are tender, about 3 to 4 minutes. Remove from heat and drizzle with lemon juice.
  • Combine garlic, mint, parsley, and lemon zest in a bowl. Spoon over radishes, then top with freshly ground pepper and flaky salt for an extra touch of flavor.
