Roasted red onions

Ingredients:
  • 5 red onions
  • 1 knob of unsalted butter
  • 4 cloves of garlic
  • ½ a bunch of thyme (10g)
  • 1 tablespoon of runny honey
  • 2 tablespoons of red wine vinegar
Instructions:
  • Preheat the oven to 200°C/400°F/gas 6. Peel and slice the onions into 1cm-thick rounds and place them in a large roasting tray. Scatter over the butter, 1 tablespoon of olive oil, sliced garlic, thyme sprigs, sea salt, and black pepper. Toss to coat, then spread the onions into a single layer. Roast for 30 minutes, shaking the tray halfway through. Remove from the oven, drizzle with honey and red wine vinegar, mix well, and cover with foil. When the steak is resting, return the onions to the oven, covered, and bake for 15 minutes until sticky and sweet. Season to taste before serving.
