Truffle-infused roasted potatoes with onions, parsley, and Parmesan for an exquisite flavor.
Ingredients:
  • nonstick cooking spray
  • 4 medium red potatoes, cut into 1/2-inch cubes
  • 0.33333334326744 cup diced yellow onion
  • 3 tablespoons truffle oil
  • 2 tablespoons chopped fresh parsley
  • 0.33333334326744 cup shredded Parmesan cheese
Instructions:
  • Heat the oven to 350°F (175°C) and grease a glass baking dish with cooking spray.
  • Mix together the potatoes, onion, truffle oil, and parsley in the baking dish until the potatoes are evenly coated with oil.
  • Bake in the preheated oven for 20 minutes. Stir well, then bake for an additional 20-30 minutes, stirring every 10 minutes, until crispy.
  • Top with a generous layer of Parmesan cheese and bake until gooey and bubbly, approximately 5 minutes.
