"Quick and savory roasted stuffed pears, perfect for a gourmet appetizer!"
Ingredients:
  • 4 unpeeled ripe firm pears, cut in half lengthwise, cored*
  • 1 tablespoon olive or vegetable oil
  • 1/2 teaspoon kosher (coarse) salt
  • 1/4 teaspoon coarse ground pepper
  • 1 teaspoon chopped fresh or 1/2 teaspoon dried rosemary leaves, crushed
  • 1/3 cup finely crumbled Gorgonzola cheese
  • 1/4 cup chopped walnuts, toasted
Instructions:
  • Preheat your oven to 375°F. If needed, trim a thin slice from the rounded side of the pear halves so they sit flat in the pan. Place the pear halves, cut sides up, in a 13x9-inch pan. Brush the tops of the pears with oil, then season with salt, pepper, and rosemary for added flavor.
  • Roast uncovered for 15 minutes. Fill each pear half's cored hollow with 2 teaspoons of cheese. Continue roasting uncovered for an additional 10 to 15 minutes until pears are tender and cheese is soft. Sprinkle with walnuts and drizzle with extra olive oil if desired.
