Roasted tomatillo salsa with peppers, onions, and cilantro - a zesty appetizer or condiment!
Ingredients:
  • 12 medium tomatillos, peeled
  • 3 Anaheim chile peppers
  • 2 large onions, peeled
  • 2 jalapeno pepper, seeded and minced
  • 5 cloves garlic, peeled
  • 1 bunch fresh cilantro, stems removed
  • 2 tablespoons lemon juice
  • 1 pinch salt to taste
Instructions:
  • Position an oven rack 6 inches below the broiler and preheat the broiler.
  • Arrange tomatillos, Anaheim peppers, onions, jalapeno peppers, and garlic on a spacious rimmed baking sheet.
  • Broil the tomatillos in the preheated oven until they release their juices, for 7 to 10 minutes. Remove the tomatillos and garlic from the baking sheet. Flip the Anaheim peppers, jalapeno peppers, and onions, then return to the oven. Continue to broil until the peppers are blackened, around 5 minutes more. Remove from the oven and allow to cool until safe to handle, approximately 5 minutes.
  • Carefully remove charred areas from the vegetables while preserving the flesh. Combine tomatillos, Anaheim peppers, onions, jalapeno peppers, garlic, cilantro, lemon juice, and salt in a food processor. Pulse until finely chopped and well mixed. Chill salsa in the refrigerator for a minimum of 30 minutes before serving.
