Roasted strawberry crepes

Ingredients:
  • 2 x 250g punnets strawberries, washed, hulled, halved
  • 55g (1/4 cup) caster sugar
  • 4.40 gm vanilla essence
  • 4 Frozen French Style Crepes
  • Icing sugar mixture, to dust
  • Warm vanilla custard, to serve
Instructions:
  • Preheat your oven to 180°C. Line a baking tray with non-stick baking paper. Place strawberries in a single layer on the tray. Sprinkle with caster sugar and drizzle with vanilla. Gently toss to coat. Roast the strawberries in the oven for about 10 minutes, flipping them once, until they start to soften and a syrup forms.
  • Heat the crepes according to the instructions on the packet.
  • Serve the crepes, strawberries, and syrup on individual plates, dust with icing sugar, and enjoy with custard right away.
