Delicious roasted zucchini and onions mixed with marinara sauce, served with penne pasta. Pair with a side salad and bread rolls for a memorable meal!
Ingredients:
  • 3 medium zucchinis, sliced
  • 2 medium onions, sliced
  • 3 tablespoons olive oil
  • salt and ground black pepper to taste
  • 1 (16 ounce) package penne pasta
  • 1 (28 ounce) jar marinara sauce
  • 0.5 cup grated Parmesan cheese
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C).
  • Coat zucchini and onions in a generous amount of olive oil in a large bowl until well mixed. Transfer the vegetables to a spacious baking dish.
  • Roast in the preheated oven until golden for about 30 minutes. Season with salt and pepper, then lower the oven temperature to 350 degrees F (175 degrees C).
  • While the vegetables are in the final stages of roasting, boil a large pot of lightly salted water. Add penne and cook until al dente, about 11 minutes, then drain.
  • Grease a 9x13-inch baking dish with a touch of oil.
  • In a saucepan, gently heat up the marinara sauce until it's hot. Spread this flavorful sauce in the prepared baking dish. Layer with cooked penne, then add the roasted zucchini and onions on top. Finish by generously sprinkling Parmesan cheese over everything.
  • Cook until the sauce is bubbling in the preheated oven for 35 to 40 minutes. Allow it to rest for 5 minutes before serving.
