Easily customize roasted zucchini with seasonal flavors for a delicious garden-fresh side dish.
Ingredients:
  • 1 pound zucchini, cut into 2-inch strips
  • 1.5 tablespoons grapeseed oil
  • 1 pinch salt and ground black pepper to taste
  • 1 pinch garlic powder
  • 1 pinch cayenne pepper
  • 1 serving cooking spray
  • 0.5 lemon
  • 1 tablespoon chopped fresh parsley
  • 1 pinch sea salt flakes to taste
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) with a rimmed baking sheet inside to heat up.
  • In a bowl, combine zucchini with oil, salt, pepper, garlic powder, and cayenne; mix well to coat evenly.
  • Gently take out the hot baking sheet, give it a light spray of cooking oil, and arrange the zucchini evenly on it.
  • Place in the oven until golden brown, turning once, for approximately 20 minutes. Drizzle with fresh lemon juice, garnish with parsley, and finish with a sprinkle of sea salt.
