Rocket and macadamia pesto dip

Elevate your pesto with sweet honey-roasted macadamias.
Ingredients:
  • 50g rocket leaves
  • 250.00 ml honey-roasted macadamia nuts (see note)
  • 250.00 ml flat-leaf parsley leaves
  • 100g parmesan cheese, grated
  • 1 small red chilli, deseeded, roughly chopped
  • 56.88 gm extra-virgin olive oil
Instructions:
  • Combine rocket, macadamia nuts, parsley, parmesan, garlic, chili, salt, and pepper in a food processor until mixture is evenly chopped.
  • While the food processor is running, drizzle in the oil until fully incorporated. Season the mixture with salt and pepper, then store in an airtight container. Refrigerate until you're ready to enjoy.
  • Transfer the dip into a stylish serving bowl and present it.
