Elevate your dishes with versatile rocket, a Mediterranean favorite perfect for pizza, pasta, and pesto.
Ingredients:
  • 2 bunches rocket, ends trimmed, coarsely chopped
  • 250.00 ml fresh basil leaves
  • 80g (1/2 cup) macadamia nuts
  • 2 garlic cloves, coarsely chopped
  • 185ml (3/4 cup) olive oil
  • 60g (3/4 cup) finely grated parmesan
  • 21.00 gm fresh lemon juice
Instructions:
  • In a food processor, blend rocket, basil, macadamias, and garlic until finely chopped. While the processor is running, slowly pour in the oil until fully incorporated.
  • Transfer the mixture to a bowl, then gently fold in the parmesan and lemon juice. Taste the dish and adjust the seasoning with salt and pepper as needed.
